Summertime Salad featuring Santa Fe & Chipotle Lime Seasoning

Ingredients: 

1 medium cucumber, diced large 
1 large tomato, diced large 
2 ears of corn, kernels removed, or 1 cup whole kernel corn
1 can of black beans, drained and rinsed
2 Tbsp. apple cider vinegar
juice of 1 lime
¼ cup plus 1 Tbsp olive oil
2 Tbsp. Stuart's Spices Santa Fe Seasoning 
2 TbspStuart's Spices Chipotle Lime Seasoning
1 avocado, diced (optional)

Directions:

  • Combine the vegetables in a bowl.
  • Whisk together the vinegar, lime juice, olive oil, Santa Fe and Chipotle Lime seasoning. Makes about ½ cup of vinaigrette.
  • Stir ¼ cup vinaigrette into the vegetable mixture and mix well. Add additional vinaigrette to taste.
  • Refrigerate for 30 minutes minimum to allow the flavors to blend, then serve.
