Tropical Rice and Bean Salad

Our Island Spice blend bursts with tropical flavor and makes a delightful partner with the vegetables in this simple but satisfying salad recipe.


  • ¾ cup uncooked rice
  • 1½ tsp Stuart's Spices Island Spice
  • 1 can black beans, well rinsed
  • ¾ cup corn, frozen or fresh (if fresh, cook first)
  • 1 red bell pepper, diced
  • 1 bunch green scallions, chopped
  • 1 mango diced (optional)
  • black pepper to taste

For the dressing: 

  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • Juice from 1 lime (around 1 tbsp)
  • 1 Tbsp Stuart's Spices Island Spice


  1. Cook rice per package instructions, adding 1 1/2 tsp Island Spice while cooking
  2. Let rice cool
  3. Toss the rice with beans, corn, pepper, scallions, and mango
  4. Generously pour dressing over salad, to taste and mix well
  5. Add pepper to taste
