Vegetable Medley for Loaded Nachos

Not sure what to make for dinner? Grab a bag of chips, some shredded cheese, and this veggie medley for a fun and filling loaded nacho night!

INGREDIENTS

  • 2 cups kale, chopped finely
  • 2 medium carrots, diced (you can also use baby carrots)
  • 1 can pinto beans, drained
  • 1 medium white onion, diced or chopped
  • 1 bag tortilla chips
  • 1 cup shredded cheese
  • 1 1/2 tbsp Stuart's Spices Taco Seasoning

INSTRUCTIONS

  1. Preheat oven to 375°
  2. Combine diced carrots, beans, diced onion, and chopped kale into a bowl
  3. Add Taco Seasoning and mix until everything is coated
  4. Spread tortilla chips onto a baking sheet (if you use aluminum foil, spray it with non-stick spray first)
  5. Spread the veggie mixture out evenly over the chips
  6. Top with cheese and more taco seasoning as desired
  7. Bake for 10-15 minutes or until cheese is melted and slightly browned on top

Optional: Pickled jalapenos, shishitos, or banana peppers can add a tangy, vinegary kick to these nachos. Try them with your favorite hot sauce, sour cream, or salsa!
