(If not available, substitute ½ tsp. cinnamon, ½ tsp. ground ginger, ¼ tsp. ground nutmeg & ¼ tsp. ground cloves)
1½ Tbsp. lemon juice
1 tsp. vanilla extract
24 oz. cream cheese
1 cup sugar
15 oz. pumpkin
3 eggs
1½ cups sour cream
⅓ cup real maple syrup
For the graham cracker pecan crust:
4 graham crackers
24 ginger snaps
½ cup toasted pecans
3 Tbsp. butter (melted)
2 Tbsp. sugar
