Sumac Lemon Bars

Tart yet sweet with a crumbly crust, this dessert is a wonderful way to satisfy your carving for a decadent dessert without being too difficult to make.

INGREDIENTS

For the crust:

2 cups flour

1 cup butter

1/2 cup sugar

3 tsp Stuart's Spices Sumac

For the filling:

1/4 cup flour

1 1/2 cups sugar

4 eggs

6 tbsp lemon juice (2/3 cup at least) 

 *If using fresh lemons, it will be about 4 medium-sized lemons* 

 INSTRUCTIONS

• Preheat Oven to 350 degrees
• Soften butter in the microwave if cold
• Combine crust ingredients in a large bowl, and blend together well until there are no lumps of butter
• Line a 9 x9 baking pan with parchment paper, then press dough evenly into pan
• Bake crust for 20-30 minutes until golden brown

*While the crust is baking, you can make the filling*

• In another bowl, combine the flour and sugar first
• Slowly whisk the egg into the flour and sugar, and after the egg is incorporated, whisk the lemon juice in, mixing well but not beating harshly
• Once the crust is done, pull it out of the oven, and pour the curd on top
• Bake a second time for an additional 20-25 minutes
• Once completely cooled, sprinkle the top of the bars with powdered sugar and sumac to your liking
