Pesto Orzo with Broccoli & Roasted Sweet Potatoes

Pesto lovers will enjoy the pairing of the sweet potatoes with the freshness of the broccoli and pesto. 


For the pasta: 

For the sweet potatoes: 

  • 2 sweet potatoes, cut into cubes, skin on
  • Olive oil, enough to coat the cubes
  • Stuart's Spices Crazy Salt, to taste


  1. Preheat oven to 450°
  2. In a bowl, toss the sweet potato cubes in the olive oil and salt
  3. Spread potatoes onto one half of a baking sheet
  4. In the same bowl used for the potatoes, toss the broccoli pieces in the olive oil, Warm Italian Seasoning, and Thyme
  5. Spread broccoli onto the other half of the baking sheet
  6. Roast the broccoli for 8-10 minutes, or until slightly crispy, then remove from the pan and set aside in the bowl used for coating the vegetables in oil
  7. Continue to roast the sweet potatoes for an additional 20-25 minutes or until fork tender
  8. While potatoes are cooking, bring a medium pot of water to a boil
  9. Cook orzo 8-9 minutes or until al dente consistency
  10. Drain and add orzo to broccoli
  11. Add the pesto sauce and coat well
  12. Serve with a side salad or fresh fruit and enjoy!
