  • Island Spice Rice and Bean Salad

    Our Island Spice blend bursts with tropical flavor and makes a delightful partner with the vegetables in this salad recipe. 

    Ingredients:

    ¾ cup uncooked rice, cooked with 1½ teaspoons Stuart's Spices Island Spice and 2¼ cups water (or cook per package directions; be sure to add the Island Spice while cooking rice to flavor the rice)
    1 can black beans, well rinsed
    ¾ cup corn, frozen or fresh (if fresh, cook first)
    1 red bell pepper, diced
    1 bunch green scallions, chopped
    Optional: 1 mango, diced
    Black pepper to taste 

    for the dressing:
    ½
     cup olive oil
    ¼ cup apple cider vinegar
    Juice from 1 lime, about 1 tablespoon
    1 tablespoon Stuart's Spices Island Spice

    Directions:
    Toss the cooked and cooled rice with beans, corn, pepper, scallions and mango. Generously pour dressing over salad, to taste. Mix well.
    Add black pepper, to taste.
