1 Tbsp oil
1 cup long grain rice
3 Tbsp Stuart’s Spices Santa Fe
1/2 large onion, diced (~1 cup)
1/2 green pepper, diced
2 cups broth
1 cup diced tomatoes
1/2 cup corn
¼-½ tsp salt
Heat oil over medium heat. Add rice and onion, stir frequently for 5 min. Add Stuart’s Spices Santa Fe seasoning and continue to cook 1 more minute.
Add broth, salt, tomatoes, pepper and corn. Bring to boil. Turn down heat to simmer, cover and cook 15 -20 min till rice is done. Let sit for 5 min, fluff.
