Santa Fe Rice

An easy to make side dish that complements almost any main course!

Ingredients

  • 1 Tbsp oil
  • 1 cup long grain rice
  • 3 Tbsp Stuart's Spices Santa Fe Seasoning
  • ½ large onion, diced (~1 cup)
  • ½ green pepper, diced
  • 2 cups broth
  • 1 cup diced tomatoes
  • ½ cup corn
  • ¼-½ tsp salt

Instructions

  1. Heat oil over medium heat.
  2. Add rice and onion, stir frequently for 5 minutes.
  3. Add Santa Fe Seasoning and continue to cook 1 more minute.
  4. Add broth, salt, tomatoes, pepper, and corn. Bring to a boil. Turn down heat to simmer, cover and cook 15-20 minutes until rice is done.
  5. Let sit for 5 minutes; fluff.
