Grains of Paradise

Grains of Paradise, sometimes referred to as Melegueta pepper, Guinea pepper, Alligator pepper, or Paradise Seeds, comes primarily from West Africa. This seed has a peppery taste, milder than black pepper, with a rounded flavor that has hints of citrus, cardamom, and ginger. Can be sprinkled on at the table or cooked into the food. Used in Moroccan, Middle Eastern, and North and West African dishes. Used in mulled wine, lamb dishes, eggplant, grilled fish, chicken, and salads. With its citrus undertones, it pairs well with lemon or vinaigrettes. With its hints of cardamom, it is fun with fruit pies, cobblers, gingerbread, or spice cakes.
