Andouille is a hot French or Louisiana coarse ground sausage that can be mixed fresh or smoked. In the US the sausage is often associated with "Hot Link" or Cajun cooking, and is great in gumbo or just in a roll.
We offer packets for making 10 lbs or 25 lbs of sausage.
Our own recipe, blended with salt, dextrose, garlic, cayenne, crushed red pepper, paprika, rice flour, paprika oleoresin, allspice, and capsicum oleoresin.
