Annato Seed (achiote, atsuwete or achuete) is used both as a spice and a dye.
The rose colored seeds are used to color Caribbean and Mexican cuisines and rice with deep orange/yellow hue.
Mix the ground seed with hot water to produce a colored stock or add it to hot oil. Use the oil or stock in your recipe. Use the stock or oil to make Achiote Pates for Pollo Pibil and Achiote Chicken. The oil /stock will have an slightly bitter earthiness flavor.
