Jamaican Jerk, Sizzling!

Jerk is a style of cooking which seems to have originated in Jamaica. Meat such as chicken and pork are typically dry rubbed with Jerk seasoning then slowly cooked or grilled, like a BBQ. A marinade is generally applied, usually with a citrus juice, such as orange juice. Three key ingredients in jerk seasonings are thyme, allspice, and hot peppers. This seasoning delivers heat - and then some! That's why it's sizzling!
