New Mexican Chiles are known for their earthy, mellow and sweet flavor. They are similar to California peppers but are usually hotter and more flavorful. Some cooks like to toast them over a flame to instill a smoky flavor.
Remove seeds and membrane & rinse with warm water. Soak in hot water 10 minutes to re-hydrate or add directly to recipe that will cook at least 10 minutes. Once re-hydrated, dice or puree.
