One of the more popular French herbs, tarragon has a robust, earthy, anise-like flavor. It highlights the flavor of other herbs such as basil, bay, chives, dill, oregano, and parsley. Often used to flavor vinegars; goes well with chicken, fish, seafood, and eggs; excellent in salads and sauces, and almost always found in Bearnaise Sauce.
