Herb Roasted Red Potatoes

Herbes de Provence shines in this recipe!

Ingredients

  • 4-5 red potatoes
  • 2 tablespoons Stuart’s Spices Herbes de Provence
  • Olive oil
  • Salt to taste

Optional: For a dipping sauce on the side, try with our Beau-licious dip!

Instructions

  1. Preheat oven to 425° F and prepare a large baking sheet for roasting.
  2. Cube potatoes, then toss in a bowl with 2 tablespoons of olive oil.
  3. Arrange onto baking sheet, then lightly salt and roast for 30 minutes.
  4. Sprinkle Herbes de Provence over potatoes and turn them to coat all sides. Then spread out into an even layer again and roast for 15-20 more minutes.
  5. Potatoes should be crispy on the outside and tender on the inside when pierced.
  6. Serve with a beautiful prime rib, a scrumptious seitan roast, or your favorite baked fish!
