Macaroni & Cheese Stuffed Peppers

Perfect for spooky season or just a fun dinner!

Ingredients

  • 1 box macaroni and cheese
  • 1 pound ground beef, ground turkey, or TVP
  • 1 tablespoon Stuart’s Spices Fajita Seasoning
  • 1 cup shredded cheese of choice, we recommend freshly shredded extra sharp cheddar but you can definitely use multiple cheeses!
  • 3 bell peppers
  • 1/2 onion, sweet or yellow, diced
  • Optional: bread crumbs for the top

Instructions

  1. Preheat oven to 350 F and line a baking sheet with aluminum foil.
  2. Cut the tops off of the bell peppers and remove the insides carefully, then set aside.
  3. Start cooking boxed macaroni and cheese per package instructions.
  4. While the noodles are cooking, sweat the onions in 1 tablespoon of olive oil in a medium size pan, then brown the meat or TVP in the same pan, adding 1/2 tablespoon of the Fajita seasoning and mixing it thoroughly.
  5. After the macaroni and cheese is done, drain it but reserve 1/2 cup of pasta water and set aside, then mix according to box instructions.
  6. Add 1/2 cup of cheese, the other 1/2 tablespoon of fajita seasoning, and the meat or TVP, stirring to combine. Use the reserved pasta water to bring it to a creamy consistency, adding a little at a time.
  7. Stuff the peppers and top with remaining shredded cheese and the breadcrumbs if desired.
  8. Bake for 15-20 minutes, serve with your favorite side dishes and enjoy!

Tips

For a cute treat, cut faces into the bell peppers!
