1. Preheat oven to 375° F
2. In a medium-size bowl, add chips, 3-4 teaspoons of Taco Seasoning and let them rest
3. In a smaller bowl, add black beans, sweet corn, and onion
4. Add about 1/2-1 teaspoon of Taco Seasoning and mix well
5. Sprinkle some water over the chips and toss to coat in the Taco Seasoning
6. Spread chips evenly on a nonstick tray, or cover your oven-safe tray with aluminum foil and spray
7. Sprinkle a little bit of the cheese on top
8. Add the bean mix, and then add more cheese on top
9. Bake for 15-20 minutes, or until cheese is bubbly and browning
10. Top with diced cubanelle and cherry tomatoes
11. Add any other desired toppings and enjoy!
