Cloves are an incredibly versatile spice. They have a strong aroma and flavor, often described as sweet, rich, fruity, sultry, and for some people - also bitter. As a result of their pungency, they are generally used sparingly in recipes. Cloves are used on both sweet and savory dishes.
Whole cloves are used to stud or pierce the top of a ham, giving it the rich, sweet aroma as it bakes in the oven. They add depth of flavor to other pork dishes, BBQ, lamb and beef dishes, stews and gravies, and are found in most pickling spices. They are also found in many curries and in Chinese 5 Spice.
On the sweet side, cloves are used in baking cookies, breads, custards and pies. Delicious with carrots, apples, oranges, squash, and pumpkin.
Cloves are often paired with cinnamon, nutmeg, ginger, cardamom, and mace.
Cloves are often the potent aromatic found in potpourri and spices bags. Try piercing an orange with cloves to hang in your home or placed in a bowl - the aroma is inviting!
