Yellow mustard seeds are actually, by their true name, white mustard seeds. They originated in the Eastern Mediterranean regions, but are now grown in several countries including the US and Canada. They are more mild than the brown seeds, and are yellow in color. Mustard seeds are used for pickling, brines, and sauerkraut. They can also be roasted or toasted in a skillet to release their flavor and then added to cold pasta salads or grain dishes.
