Banana Nut Muffins

A perfect anytime treat!


  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1 tsp Stuart’s Spices Vietnamese Cinnamon
  • 1 tsp Stuart’s Spices Confection Perfection
  • dash of salt
  • 1/4 cup unsalted butter, melted but cooled
  • 1/2 cup sugar
  • 1 tablespoon brown sugar
  • 1 egg
  • 1 tablespoon vegetable oil
  • 3/4 teaspoon vanilla
  • 1 large banana
  • 1/2 cup milk
  • 1/4 cup crushed walnuts


1. Preheat oven to 350° F

2. Prepare cupcake pan by spraying cupcake liners with non-stick spray

3. In a large mixing bowl, mix butter and sugars together, until smooth

4. Add in banana, egg, oil, and vanilla

5. Mix well and then slowly incorporate the milk

6. Sift in flour, baking soda, and the spices

7. Fold mixture, careful not to overwork, there will be lumps

8. Spoon into cupcake liners, each one will take about two spoonfuls

9. Sprinkle chopped walnuts on top

10. Bake for 16-18 minutes, depending on your oven, the tops of the muffins will spring back to the touch, or if you use a toothpick it will come out clean
