BBQ Chicken Burrito Bowl

All your favorite burrito toppings in one convenient dinner!

Ingredients

  • 2 chicken breasts, butterflied
  • 2-3 tablespoons Stuart’s Spices Memphis Style Dry Rub
  • 2 teaspoons Stuart’s Spices Fajita Seasoning
  • 2-3 tablespoons olive oil
  • Memphis Style BBQ Sauce of choice
  • 1 cup sweet corn
  • 1 cup black or pinto beans, rinsed and drained
  • 1 cup white rice, follow instructions for amount of water needed
  • 1 bunch cilantro, finely chopped
  • 1 lime, cut into wedges
  • 1/2 cup shredded cheese of choice
  • 1 cup romaine or lettuce, finely shredded
  • 2 roma tomatoes, diced
  • Salt & pepper to taste
  • Optional: avocado

Instructions

  1. Preheat oven to 375° F
  2. Follow instructions to cook rice while oven is preheating, we use a rice cooker with 1 1/2 cups water to 1 cup rice
  3. In a medium-sized bowl, add chicken, 2-3 tablespoons Memphis Style Dry Rub, and 2-3 tablespoons of olive oil, amount of spice and oil depending on the size of the chicken 
  4. Coat thoroughly and transfer to oven-safe dish
  5. Bake chicken for 30-35 minutes or until internal temperature reaches 165° F
  6. While chicken and rice are both cooking, add the diced tomatoes to a small bowl, mixing in cilantro, salt, and pepper to taste
  7. Squeeze juice of 1-2 lime wedges over the top of the tomatoes and then set aside
  8. In a small pot or pan, heat the corn and beans together or separately for 3-4 minutes, adding a teaspoon of Fajita seasoning to each, and then set aside
  9. Once rice is done cooking, fluff and then add cilantro, salt, and pepper to taste, using remaining lime wedges for juice
  10. When chicken is done, slice into thin strips, place into a clean bowl, and then add your favorite Memphis BBQ sauce, tossing to coat the chicken strips well
  11. Arrange bowls with cilantro lime rice on the bottom, add your favorite toppings, and enjoy!

 

Tips

Want a spicier or zestier quick salsa? Toss in some chopped onion, jalapeno, or even fresh garlic for an extra kick!

Make it meatless: Seitan is a stellar substitute for the chicken in this recipe, but you could also use mushrooms!
