Chipotle Lime Shrimp Salad

Elegant in presentation, but super simple to make!


  •  1/2 sweet onion, cubed
  • 1 red pepper, cubed
  • handful of cherry tomatoes, cut in half
  • 1/2 cup sweet corn
  • 1 avocado, cubed
  • 12 medium-large raw shrimp, tailed and deveined
  • 2 tablespoons Stuart’s Spices Chipotle Lime Seasoning
  • 3-4 tablespoons white wine or vermouth
  • olive oil
  • 1 lime, cut in wedges
  • scallions or parsley for garnish


  1. Heat olive oil in a large pan
  2. Add the onion and pepper and sauté until just tender, about three minutes
  3. Coat the raw shrimp with the Chipotle Lime Seasoning
  4. Add to pan and continue to sauté until the shrimp are cooked through, about 3-5 minutes
  5. Add white wine or vermouth to deglaze
  6. Add sweet corn and cherry tomatoes before transferring to plate
  7. Serve with avocado and extra lime wedges!


Optional: Add an extra 1-2 teaspoons of the Chipotle Lime Seasoning as you sauté everything in the pan to give the dish a bit more of a kick!
