Chocolate Pumpkin Oat Muffins

A simple sweet treat to make any time!


  • 1 1/2 cups steel cut oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/2 teaspoon Stuart’s Spices Pumpkin Pie Spice
  • Dash of salt
  • 2 eggs
  • 1 cup canned pumpkin
  • 3/4 cup dark brown sugar
  • 3 tablespoons oil, we prefer vegetable but you can use canola, grapeseed, or avocado
  • 1 teaspoon vanilla extract
  • 1/3 or 1/2 cup chocolate chips, if you’re not a fan of chocolate try cinnamon chips or craisins!


  1. Preheat oven to 350° F and add your muffin liners to your tin, make sure to spray so they don’t stick
  2. Add oats to blender and grind until fine
  3. Add baking powder, baking soda, pumpkin pie spice, and salt, and pulse until combined
  4. Add eggs, pumpkin, brown sugar, oil, and vanilla, and puree until smooth
  5. Mix in chocolate chips, cinnamon chips, or craisins
  6. Fill muffin cups almost to the top and bake 16-18 minutes or until a toothpick comes out clean
