Cowboy Caviar

Fresh, crisp, and fun! This is great to have on hand for warm weather or to make ahead for a party.


  • 3 plum tomatoes, chopped
  • 1 red or Vidalia onion, minced
  • 1 bell pepper, diced
  • 2-3 jalapeños, seeded & diced
  • 3 garlic cloves, minced
  • 2-3 scallions, sliced
  • 2 cans (15 ounces) assorted beans, rinsed and drained, we recommend black-eyed peas and pinto
  • 1 can (15 ounces) corn or 11/2 cups frozen & thawed
  • 1/4 cup cilantro, chopped
  • 3-4 tablespoons Stuart’s Spices Chipotle Lime Rub or Mesquite Rub
  • 2-3 limes, juiced


  1. Mix ingredients together in a large bowl
  2. Refrigerate for at least one hour to allow flavors to meld
  3. Serve with chips and enjoy!


Note: Try it using black, lima, or even navy beans! If you want it even more refreshing, add some diced cucumber and extra bell pepper.
