Simple & Easy Gravlox

Cured with sugar, salt and dill, Gravlox has a fresh, delicate flavor.


  • 3-4 pounds salmon fillet, with or without skin
  • Stuart’s Spices Gravlox Rub
  • Optional: 1 ounce vodka or brandy


  1. Lay fillet on top of plastic wrap, skin side down
  2. Cover fillet with entire package of Gravlox rub, a full package of rub is necessary to ensure proper cold curing
  3. If you choose to use the vodka or brandy, pour it over the salmon at this point
  4. Wrap seasoned filet with plastic wrap and place in a pan
  5. Place second pan on top of the fillet, then place a heavy weight on top
  6. Refrigerate like this
  7. Open salmon package every 12-24 hours and baste with the accumulated liquid
  8. After 3-4 days, when the salmon has lost its translucence, scrape off topping, leaving just a little for added flavor
  9. Thinly slice the fillet on a bias
  10. Serve by itself or on your favorite toasted bagel and enjoy!
