Egg & Chorizo Breakfast Tacos

You’ll want these breakfast tacos for every single meal!


  • 6 eggs
  • 1 teaspoon Stuart’s Spices Crazy Salt
  • 1 pound ground pork
  • 2-3 tablespoons Stuart’s Spices Chorizo Sausage Seasoning
  • 2 cups kale, washed and chopped coarsely
  • 2 ripe mangoes, diced
  • 1 jalapeno, diced
  • 1/4 red onion, diced
  • 1/2 red bell pepper, diced
  • 1 avocado
  • 1/2 cup sour cream
  • cilantro for garnish
  • 1 lime, cut into quarters
  • Olive oil
  • 2 teaspoons Stuart’s Spices Garlic Party
  • Tortillas


  1. In small mixing bowl, mix avocado and sour cream together until smooth, and then set aside.
  2. In another bowl, mix mango, jalapeno, red onion, and bell pepper, then squeeze limes over the mixture and stop once at the desired acidity, then cover and set aside.
  3. In another bowl, add kale, a tablespoon of olive oil, and Garlic Party, and crush with hands or with a wooden spoon until kale is a darker green, then also set aside.
  4. In a medium-size frying pan, heat a tablespoon of olive oil over medium heat and add ground pork.
  5. Add Chorizo Seasoning and cook until meat is crumbly and no pink remains.
  6. Crack eggs into a bowl and beat until well blended, then pour over chorizo, allowing egg to firm up before scrambling.
  7. Prepare tortillas by layering kale, egg, chorizo, salsa, and finish with the crema on top
  8. Garnish with cilantro and enjoy!


Optional: Squeeze extra lime juice on top for another burst of citrus.
