Espresso Rubbed Pork Chops

Using our fantastic collab blend, Coffee Connection Espresso Rub!

Ingredients

  • 4 boneless pork chops
  • 2 tablespoons Stuart’s Spices Coffee Connection Espresso Rub
  • 1/4 cup brown sugar
  • 1/4 cup water
  • 2 tablespoons gochujang
  • 1 teaspoon gochugaru chili flakes
  • High heat oil, we use grapeseed

Instructions

  1. Make the glaze first: In a small saucepot, add sugar and water on medium-high heat, careful not to let it boil
  2. Once sugar has dissolved, add gochujang and gochugaru chili flakes, stirring until incorporated and the glaze thickens, set aside
  3. Over medium-high heat, add 1 tablespoon of high-heat oil to a cast iron or stainless steel skillet
  4. While skillet is getting up to temp, cover each pork chop with Espresso Rub, including the sides
  5. Cook two at a time, 4-5 minutes each side depending on thickness, or until chops temp to 145° F
  6. Remove from heat and let rest for 5 minutes before cutting

Tips

Suggested sides: We paired these chops with steamed sugar snap peas and garlic butter farro!
