Guajillo Coleslaw

Sweet with a little heat, snappy, and so so yummy!


  • 2 cups purple cabbage, finely sliced
  • 2 cups green cabbage, finely sliced
  • 1 1/2 carrots, cut into matchsticks
  • 1 1/2 cups mayo
  • 2 Stuart’s Spices Guajillo Peppers, rehydrated in 1 cup hot water
  • 1 teaspoon Stuart’s Spices Rochester Pepper Blend
  • 2-3 limes, for juice
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • Optional: Slice up some fresh bell pepper before serving


  1. In a large bowl, add cabbage, carrot, and bell pepper (if using)
  2. In another bowl, add mayo, lime juice, and spices, let that meld while you rehydrate and puree the guajillo
  3. In a blender, add your rehydrated guajillo peppers and blend until pureed
  4. Add into sauce and then mix into cabbage and carrot mixture
  5. Stir until everything is covered, serve immediately or cover and chill in fridge
