Island Spice Couscous Bowl

A delicious, lightweight meal for any occasion.


  • 1 pound ground turkey
  • 2 teaspoons Stuart’s Spices Granulated Garlic
  • 1 tablespoon Stuart’s Spices Island Spice
  • Salt and pepper to taste
  • 1 box couscous, cooked to package instructions
  • 1 can chickpeas, rinsed and drained
  • 1 red onion, cut into wedges
  • Olive oil


For the drizzle:

  • 1-2 tablespoons Greek yogurt
  • pinch of Stuart’s Spices Minced Garlic
  • 1 teaspoon lemon juice


  1. Preheat oven to 425° F
  2. Cook couscous according to package instructions
  3. In a bowl toss chickpeas and red onion with salt and pepper, then roast for 15-18 minutes
  4. Add ground turkey, garlic, Island Spice, salt and pepper into a bowl and gently mix, then form into little patties, be careful not to overmix as turkey can become firm and rubbery
  5. Get a pan ready with some olive oil over medium-high heat and brown patties, about 4 minutes each side
  6. While patties are browning, combine Greek yogurt, minced garlic, and lemon juice to create the drizzle
  7. Plate couscous topped with turkey patties, roasted chickpeas and onions, then drizzle desired amount of sauce on top and enjoy!


Completely optional but adds a pop of color and a citrusy taste: fresh parsley!
