In a bowl toss chickpeas and red onion with salt and pepper, then roast for 15-18 minutes
Add ground turkey, garlic, Island Spice, salt and pepper into a bowl and gently mix, then form into little patties, be careful not to overmix as turkey can become firm and rubbery
Get a pan ready with some olive oil over medium-high heat and brown patties, about 4 minutes each side
While patties are browning, combine Greek yogurt, minced garlic, and lemon juice to create the drizzle
Plate couscous topped with turkey patties, roasted chickpeas and onions, then drizzle desired amount of sauce on top and enjoy!
Tips
Completely optional but adds a pop of color and a citrusy taste: fresh parsley!
