Loaded Weeknight Nachos

Ingredients

  • Your favorite tortilla chips, about half a bag for a full tray
  • Stuart’s Spices Taco Seasoning
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup sweet corn
  • 1/2 sweet Vidalia onion, diced
  • 1 cubanelle pepper, diced
  • 1 cup shredded cheese, we love using freshly shredded cheddar
  • 1/2 cup cherry tomatoes. sliced in halves
  • favorite toppings: we always choose fresh avocado, lime juice, and sour cream

Instructions

1. Preheat oven to 375° F
2. In a medium-size bowl, add chips, 3-4 teaspoons of Taco Seasoning and let them rest
3. In a smaller bowl, add black beans, sweet corn, and onion
4. Add about 1/2-1 teaspoon of Taco Seasoning and mix well
5. Sprinkle some water over the chips and toss to coat in the Taco Seasoning
6. Spread chips evenly on a nonstick tray, or cover your oven-safe tray with aluminum foil and spray
7. Sprinkle a little bit of the cheese on top
8. Add the bean mix, and then add more cheese on top
9. Bake for 15-20 minutes, or until cheese is bubbly and browning
10. Top with diced cubanelle and cherry tomatoes
11. Add any other desired toppings and enjoy!

Tips

We love the hit of acidic lime paired with the smooth sour cream, but you can add your favorite hot sauce, crispy chicken, black olives, or any other combination of your favorite nacho toppings!
