Old Fashioned Apple Pie

With a crispy crust and a wonderful mix of tart and sweet apples!

Ingredients

For the crust:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup + 2 tablespoons shortening
  • 5-6 tablespoons ice cold water

 

For the filling:

  • 1/3 cup sugar
  • 1/4 cup all-purpose flour
  • 3 tablespoons Stuart’s Spices Apple Pie Spice
  • dash of salt
  • 6 cups thinly sliced peeled apples, we recommend a mix of red and green
  • 4-5 pats of butter, about 1 tablespoon each

Instructions

For the crust:

  1. In a medium-size bowl, mix flour and salt
  2. Using a fork, cut in the shortening until there are no large clumps
  3. Add in tablespoons of water one at a time, stirring to incorporate it into the flour until it begins to stick – you can add more water if needed
  4. Form a ball with the dough, cover and refrigerate at least half an hour or until dough is slightly firm

 

For the filling:

  1. While the pie crust is chilling, peel and slice your apples
  2. In a medium-size bowl, mix together sugar, flour, Apple Pie Spice, and salt, then set aside
  3. Preheat oven to 425° F
  4. Remove chilled crust from fridge and separate into two parts, with one being slightly larger, this will be the top crust
  5. On a floured surface, roll out the larger part into a circle that is slightly larger than your pie plate, and transfer the crust to the plate
  6. Add a layer of apples and then spoon some of the dry mix on top, repeating this each layer
  7. Add the pats of butter on top with one in the middle
  8. Roll out the top crust and lay over the filling, folding and then crimping the edges together in your preferred style
  9. Cut vents into the top of the pie and add pie crust protectors or strips of aluminum foil around the edges so they don’t burn
  10. Bake for 45-50 minutes, or until apples feel tender when a knife is inserted through a vent
  11. Make sure to remove protectors or foil for the last 15 minutes of baking so they get enough color
