Slow Cooker Chicken & Dumplings

Delicious and hearty, this slow cooker recipe is easy to put together and even easier to eat!

Ingredients

  • 1 ½ pounds chicken thighs, cleaned and trimmed of fat
  • 1 medium onion, diced
  • 3 cups frozen vegetables, we used the green bean, pea, corn, and carrot mix
  • 3 cups chicken broth
  • 1 can cream of chicken soup
  • 1-2 tablespoons Stuart’s Spices Chicken Lick’n or Smokin’ Sweet
  • 2-3 teaspoons lemon juice
  • 2 bay leaves
  • Salt and pepper to taste
  • Olive oil

 

For the dumplings:

  • 2 cups Bisquick mix
  • 2/3 cup milk

Instructions

  1. In a medium-size bowl, mix chicken with Chicken Lick’n or Smokin’ Sweet blend and 1 tablespoon olive oil
  2. In your slow cooker add diced onion, broth, cream of chicken soup, bay leaves, and lemon juice, stirring to combine
  3. Add chicken, cover, and cook 5-6 hours on low heat or 3-4 hours on high heat
  4. Shred chicken in slow cooker, then add mixed vegetables
  5. Salt and pepper to taste
  6. Follow instructions on Bisquick mix to make dumplings, then drop in large spoonfuls on top of chicken
  7. Set heat to high and cover to cook the dumplings about 30-45 minutes, or until tops spring back at the touch
  8. Serve immediately and enjoy!

Tips

Optional: You can double the amount of baking mix and milk if you like more dumplings on top!

For the next day: You can add a little bit of milk or broth if it thickens up too much.
