Tart and sweet with a crumbly crust!
Ingredients
For the crust:
2 cups flour
1 cup butter
1/2 cup sugar
3 teaspoons
Stuart’s Spices
Sumac
For the filling:
1/4 cup flour
1 1/2 cups sugar
4 eggs
2/3 cup lemon juice,
if using fresh lemons, it will be about 4 medium-sized lemons
Instructions
Preheat oven to 350° F
Soften butter in the microwave if cold
Combine crust ingredients in a large bowl, and blend together until there are no lumps of butter
Line a 9 x13 baking pan with parchment paper, then press dough evenly into pan,
if you like a thicker bar, you can use a 9×9
Bake crust for 30 minutes or until golden brown
While crust is baking, in another bowl combine the flour and sugar
Slowly whisk the egg into the flour and sugar and after the egg is incorporated, whisk the lemon juice in, mixing well but not beating harshly
Once the crust is done, pull it out of the oven, and pour the curd on top
Bake a second time for an additional 20-25 minutes
Once completely cooled, sprinkle the top of the bars with powdered sugar and sumac to your liking
