Sweet Potato Casserole


  • 3-4  sweet potatoes
  • 1 banana, cut into slices
  • 1 cup low fat plain yogurt
  • 2 teaspoons  Stuart’s Spices Pumpkin Pie Spice
  • 1 teaspoon Stuart’s Spices Ground Cinnamon


  1. Pierce the sweet potatoes a few times with fork
  2. Wrap in aluminum foil and bake at 400° F for 45-60 minutes, or until tender
  3. Cut the potatoes in half lengthwise
  4. Holding the sweet potatoes with a potholder or towel, scoop out the insides into a bowl
  5. Mash with a potato masher or fork
  6. Add yogurt and Stuart’s Spices Pumpkin Pie spice and mix thoroughly
  7. Layer into casserole dish and top with banana slices and cinnamon
  8. Bake at 350° F until warmed through and bananas are slightly glazed
