Andouille is a course-ground, hot sausage that originated in France. In the United States, andouille is often associated with Louisiana Cajun-style cooking. Andouille is great in gumbo, jambalaya, or savory stew.
We offer packets for making 10 lbs or 25 lbs of sausage.
Our own recipe, blended with salt, dextrose, garlic, cayenne, crushed red pepper, paprika, rice flour, paprika oleoresin, allspice, and capsicum oleoresin.
