Chipotle peppers are smoked, ripe jalapeño peppers. The Chipotle smokiness is its signature flavor, adding depth to many Mexican and Southwest dishes including chili and BBQ. Some people identify a slight chocolate flavor in chipotle. The level of heat for Chipotle is mild to medium, generally hotter than the Ancho pepper.
