Whether you spell it Zaatar, Zahtar or Za'atar, this traditional Middle Eastern blend is a staple in many kitchens throughout the Mediterranean region. Having tasted it, we readily understand its popularity! Just as with chili blends, curry blends, and even salsas, there are as many variations of Zaatar recipes as there are regions and families. Traditionally Zaatar is some combination of Sumac, thyme or hyssop, salt, and sesame seeds. The combination of the savory thyme with the tart citrus notes from the sumac makes it hard to stop eating!
Our favorite way to use Zaatar is to generously brush olive oil onto flatbread, Naan or pizza dough. Then sprinkle a few tablespoons of Zaatar on top. Bake it in a preheated oven at about 350-400 degrees until slightly browned, about 8-10 minutes. Cut into wedges or just pull apart and enjoy!
