BBQ Hasselback Potatoes

Ingredients

Preheat oven to 375° F.
Slice a thin piece from the bottom-side of each potato to stabilize while slicing crosswise.
Slice down through the potatoes every 1/4-inch, making sure to leave 1/8-inch at the bottom.
Brush potatoes with 1-1/2 teaspoon of oil and place in a roasting pan or on a non-stick tray.
Bake for 45-55 minutes or until tender.
Drizzle potatoes with remaining oil, sprinkle with Smokin’ Sweet Rub, and top with grated cheese.
Cook an additional 5 minutes to melt the grated cheese until slightly browned.
Sprinkle with chives and extra cheese.
Enjoy!

We love drizzling a little of our favorite BBQ sauce over these, but you can also add a dollop of sour cream on top!
