BBQ Hasselback Potatoes

BBQ Hasselback Potatoes


  • 2 medium-sized russet or sweet potatoes
  • 3 teaspoons olive oil
  • 2 teaspoons Stuart’s Spices Smokin’ Sweet BBQ Rub
  • 2 teaspoons Stuart’s Spices Chives
  • 3 tablespoons shredded cheese, we recommend freshly shredded sharp cheddar


  1. Preheat oven to 375° F
  2. Slice a thin piece from the bottom-side of each potato to stabilize while slicing crosswise
  3. Slice down through the potatoes every 1/4-inch, making sure to leave 1/8-inch at the bottom
  4. Brush potatoes with 1-1/2 teaspoon of oil and place in a roasting pan or on a non-stick tray
  5. Bake for 45-55 minutes or until tender
  6. Drizzle potatoes with remaining oil, sprinkle with a Stuart’s Spices Rub of your choice, and top with grated cheese
  7. Cook an additional 5 minutes to melt the grated cheese until slightly browned
  8. Sprinkle with chives and extra cheese
  9. Enjoy!


We love drizzling a little of our favorite BBQ sauce over these, but you can also add a dollop of sour cream on top!
