Roasted Mashed Potato Squash

This is a squash that legitimately tastes like mashed potatoes!


  • 1 mashed potato squash, sliced in two and seeds scooped out
  • 2-3 tablespoons butter
  • 3-4 teaspoons Stuart’s Spices Garlic Party
  • Optional: chili oil


  1. Preheat oven to 400° F and prepare a baking sheet with aluminum foil or nonstick spray
  2. Spread both halves of the squash with the softened butter and set onto baking sheet with scooped out side up
  3. Sprinkle Garlic Party over the top of each squash half and if you’re using the chili oil, drizzle it on as well
  4. Roast for 35-40 minutes or until soft when pierced with a fork
  5. Remove from oven and scoop out each side, mashing with extra butter or seasonings if desired
