Bologna sausage is a smoked, fine-ground sausage. It can be made with beef, pork, venison, or a blend of meats or poultry. We highly recommend a 50/50 blend of venison & pork. Mix this 6.4 ounce package with 10 pounds of meat. When you use this mix, it will also require 2 level teaspoons of instacure (6.2 % Sodium nitrite) per 10 pounds of meat.
Our own recipe, blended with salt, dextrose, buttermilk powder, white pepper, onion, paprika, allspice, and nutmeg.
