Our own recipe, blended with salt, white pepper, celery seed, mustard, marjoram, celery seed, nutmeg, ginger, onion, parsley, cardamom, and mace.

Outstanding classic German brat flavor. My batch of venison brat links turned out great with this mix. I love it with just some fried onions and mustard on a bun. I ground my meat twice for this. Once on the medium and once on the fine plate and the consistency is pretty good, although one more grind on the fine plate would have been perfect for that traditional brat consistency, which you want finer than a lot of other sausages.
