Sage is a Mediterranean herb with a slightly bitter taste, but a robust, earthy aroma. It is incredibly pungent, so use it sparingly. Sage makes wonderful breakfast sausage and works well in stuffing. It also pairs well with poultry, roasts, fatty fish, and can be used with other strong spices such as garlic or pepper.
