At Stuart’s we sell Cassia Cinnamon from 2 different countries; Korintje Cinnamon which is from the Korintje region of Indonesia, and Vietnamese Cinnamon, also known as Saigon Cinnamon. Cinnamon flavor varies from country to country, but the quality of the cinnamon bark also greatly contributes to flavor. In other words, not all cinnamon from one country is the same – just like not all wines from one region are the same. Oil content plays an important role, and our cinnamon has a high oil content, providing premium, full bodied flavor.
Korintje Cassia/Cinnamon is sweet, smooth and full bodied. We grind our Korintje Cassia cinnamon regularly, right in our Shop. By grinding in small batches, we are able to bring you amazingly fresh, fragrant cinnamon. This is the cinnamon that most of us have grown up with.
Vietnamese Cassia/Cinnamon has a stronger, sweeter yet sharper flavor. It has slightly spicy notes. Our Vietnamese Cassia has a high oil content like our Korintje Cinnamon.
